Beyond Bacon

Kids, I think it’s safe to say I have turned into a (vegan) bacon-aholic. The newest trend

I have the coolest friends.  Ever since we started budgeting my besties have been awesome about making dinners together (as opposed to expensive meals out).  Last Friday we made vegan tortilla soup with Ethel. I just wanted salad dressing

I feel like I’m clinging onto summer with this breakfast.  Home-made banana pancakes with strawberries and peaches.  This was my first sweet breakfast in a long time.   I finally finished off that massive batch of vegan gluten free pancakes that I made a while back, so I had to do actual work in the morning for these.  The effort was worth it, but I wish I’d had the energy to make a huge batch so there were leftovers.  Part one of lunch was half a sweet potato with tofu scramble.   I’ve been on… Read more >

Beer, pizza, and insomnia

Monday started bright and early (well, if we are being technical about it, I never went to bed Sunday night…sooo…I guess it started at the stroke of midnight?).  Whatever.  I got home around 8 am and immediately showered, put on my PJs, and started some oats on the stove.    I added a chopped gala to cook with the oats.  By the way, this was a pretty hefty batch (in the 2 cup range). Pa-pa-pa-pizza face
