A case of silken tofu

A reader recently discovered she wasn’t able to tolerate tofu…after ordering a case of Mori-Nu silken lite firm tofu.  So she sent them to me!!!  Thanks again Emily 🙂   They arrived slightly crushed, but I immediately got to work on cooking with them.   I had already planned on making a lasagna that day, but I’d only ever made the tofu “ricotta” with extra firm (non-silken) tofu before.  I figured I may as well give it a try with the silken kind. Work meal ideas

Contrary to what my posting may indicate, I do still work!  Sorry I’ve been withholding my packed eats from you guys.  I have only been taking pictures of 50% of them, though, so here’s what I’ve got.  Hope this helps you with some ideas! Oats.  Veggies.  Pretzels.  Sabra hummus (x2).  Lasagna (leftover).  Cookies.  Apple.  Candied ginger. Another week, another lasagna

Pasta with tofu “ricotta” is really climbing the charts in favorite dinners.  I’m making some form of this dish every other week, at least.  Rather than manicotti, which we’ve had twice this month already, I made lasagna.   Same concept as this recipe – with hummus and tofu “cheese” and spinach layered between pasta and marinara sauce.   I made a double batch of the tofu & hummus “cheese” using two whole packages of extra-firm tofu and nearly one cup of hummus.    And I used 365 brand no-bake whole wheat lasagna noodles.   I… Read more >

New shades & raw food

Just a typical morning bowl of oatmeal. If you like Italian food (particularly lasagna) and you’re looking for a shortcut.  This is it.
