Celebrate Soyfoods Month

I didn’t know that April was soyfoods month until a week ago.  That gives me another 15 days to celebrate.  I like tofu, so easy peasy. Truthfully, the various food holidays kinda make me roll my eyes most of the time.  There’s one (or more) every single day – like grilled cheese day, which was last week.  But we get to honor soy all month long!  Way better than smashing it into 24 hours. The weekly menu

Since a lot of people have been interested in our budget friendly meal planning, here’s what we had this past week.  [Spoiler alert: they’re all really inexpensive dinners] Monday Egg noodles with teriyaki tofu, broccoli, & cashews The organic broccoli was leftover from one of last week’s dinners.  The roasted salted cashews are a pantry staple.  The egg noodles were on sale at WF (we used half of the 1 lb bag/$1.69).  The organic tofu was from WF (I baked the whole block/$1.69). Commentary

I really don’t like this new UC logo.  I’m saving the Daily Bruin crossword for Friday because our baby dresser/changing table is going to be delivered sometime between 12 and 4 pm.  That’s a lot of waiting around time that I need to fill.  But I am SO excited about this dresser (nursery photos to come).   Oh, and in case you couldn’t guess, that breakfast was GF toast with Earth Balance and two perfectly fried eggs.   There’s nothing (ok, very little) that makes me happier than a fully stocked fruit situation.  I’m on… Read more >

A September day

This is an attempt at a “what I ate” full day of food.  I think I got everything. Cantaloupe.  With this, I get credit for vitamin C, vitamin E, riboflavin, folic acid, & B vitamins…it satisfies both a fruit and leafy green requirement as per What To Expect.  Efficiency in my nutrition – I like it!   For breakfast we were out of iced tea AND eggs.  Basically a mini disaster.  I made decaf tea in as little water as possible and cooled it down to room temp with a ton of almond milk.  It… Read more >

Hello appetite

Day shift food, including oatmeal, lasagna (two servings), apple, carrots & hummus, and a cinnamon roll.  Details below. Pumpkin and raisin oats made with vanilla almond milk.  I’m officially good and ready for fall. Lasagna that’s bigger than my head.  I had half at lunch time and half an hour later. Snack options.
