What I Ate…T/W

My Tuesday and Wednesday.  For your viewing pleasure. Breakfast.  Banana bread + fried egg.  Decaf, decaf, decaf. Lunch.  Celery, carrots, zucchini egg muffins with fresh grind peanut butter. After Kyle woke up I went for a short jog around the ‘hood and then we headed downtown for fro-yo. Snack.  Cultive mix of banana & white chocolate fro-yo topped with slivered almonds, shredded coconut, blueberries, and raspberries. Dinner.  Thai Peanut Zucchini Noodle Fry. Tempeh & Potato Pesto Salad

  Cool or warm, this is an easy tasty dish.  Easy being the key thing if you’d rather be soaking up the summer rays than doing things in the kitchen.  Who wouldn’t?  I’ve said this lots before – I’m not a tempeh lover.  I like it fine, and when restaurants prepare it (correctly) it’s awesome.  But yeah.  It’s not my number one.  That might all change though.  Because I just tried Westsoy’s tempeh and (dare I say it) I could eat this stuff straight up!  No cooking necessary!  And before you say it, yes, I… Read more >

Little food secrets

Here’s a dirty little secret.  I cover up one corner of toast in 99% of my photos because they have one bite taken out of them already. I don’t know why, but I always take a bite out of the bread before I put it in the toaster.  What can I say…I’m special.  Or I lack patience.  Either way it doesn’t make for a nice photo, so I always manage to cover it up with another piece of food or crop it out of the photo entirely.  My first breakfast is above (GF toast with… Read more >

Mother’s Day weekend

What an amazing weekend.  Not just because I got showered with love.  With or without Mother’s Day, this past Saturday and Sunday were just plain awesome. Kyle was down in LA on Friday for a conference, so I was solo parenting again. Separately vegetarian
