Ending the day on a high

Just out of curiosity, what meal is your favorite?

And dessert doesn’t count. Otherwise that would obviously be my answer.

I think I would have to say dinner because it’s the one I look forward to planning out and the one I put the most effort into preparing for the whole family.

Don’t get me wrong, I would happily eat my beloved kale and grain bowl salad every day for the rest of my life and be 100% excited about it each and every day. But I feel like the anticipation for what I have planned to make in the evening just builds as the day goes on…so by dinner I’m just really pumped to dig in.

This was a good one.

The salad was this recipe on the blog What’s Gabby Cooking? and I served it with rosemary bread.

Another recent hit was this lentil and butternut salad from the NY Times cooking recipe.

The first time I made it the kids RAVED about it (which is not their typical response to lentils), and guess what!?! In a super UN-kid-like move they also loved it the second time around. Phew!

If you can get past the NYT pay wall (kinda don’t get how it works because some times I can and sometimes I can’t), then definitely make this.

I made a kale salad on the side, too.

And naan.

Also, I doubled the lentil salad because I wanted leftovers for my lunch the next day.

Normally I pack the leftovers in Kyle’s lunches, but there are exceptions. Namely, salads because I LOOOOOVE soggy salads more than almost anyone else on the planet.

Of course now that we have a BBQ again, I’m loving when Kyle’s around to grill.

P begs for steak all day every day, so there’s that.

But seriously, I never thought we would be eating so much beef!!! It’s hard to save the Earth but also give your kids something nice in a time when they have very little to look forward to.

Caesar salad is the best side for steak. Or Brussels sprouts. Or corn (in the summer). What’s your go to side dish?

And now…drumroll please…

My sister gave us these delightful chocolates again from her local shop.

She actually got some for the kids too, but I left them at my parents’ house so they have to wait to enjoy them.

We also got a box of cookies from Kyle’s mom (including the peanut butter and chocolate rice crispy treats on the left) and seven layer bars.

Also I just discovered these laceys dark chocolate almond cookies from TJs and wow.

So those are some of the desserts we have been enjoying lately. Gotta end the day on a high note right?!?!

    Hi Elise! Happy New Year! This comment is completely unrelated to your post, but I have been following your blog on and off for years and remember when you used to live in NYC. All these years later, what are your thoughts on now having lived in CA for so long? Do you think about what life would have been like if you had stayed in NY?
    My family recently moved from the Wash DC metro area to the Midwest and so far, I’m so happy with our decision to do so, and wondering what your thoughts were, now that you’ve been living there for awhile!

    well, I mostly think about how enriched my life is from the time i spent in philly and nyc because never in my mind did i think i was going to be there long term. Kyle and I were both raised in california and that’s where our family was, so we approached our time on the east coast as a fun thing to do in our 20s!

    Just an FYI we are able to get a free subscription to The NY Times through our local library. It’s an awesome resource I just found out about a couple of years ago. Definitely worth checking out!
