My Tuesday and Wednesday. For your viewing pleasure. Breakfast. Banana bread + fried egg. Decaf, decaf, decaf. Lunch. Celery, carrots, zucchini egg muffins with fresh grind peanut butter. After Kyle woke up I went for a short jog around the ‘hood and then we headed downtown for fro-yo. Snack. A few weeks ago, I had this big ’ol squash just burning a hole in my pocket (countertop?). I love how everyone seems to have the “problem” of an abundance of zucchini during the summer months…I bet google’s search for zucchini recipes is at an all time high right now. I don’t have any growing in my own garden, but Kyle’s work shop is basically a warehouse surrounded by a bunch of farm land so it’s pretty much my personal U-pick right now. Since Kyle hates zucchini (weirdo) it was especially nice of him to… Read more >

I worked nights this weekend and only got 2 hours of sleep while home during the day, so I make no promises on the clarity or content that follows… I have no idea when I made or ate this lunch bowl. I don’t even know what day it is. It had Beyond Meat southwest strips, carrots, and avocado. A really simple chop salad – if you can even call it that! I’m still loving Beyond Meat. It serves as inspiration though. Salted Chocolate Coconut Brownie Bites [vegan, gluten free, FODMAPs friendly*] Ingredients: 1 cup raw walnuts 1 cup shredded unsweetened coconut 2 tbsp cocoa powder 2 dates, pitted 2 1/2 tbsp brown rice syrup 1/4 tsp salt (+ more if desired) [if necessary] water Directions: Pulse… Read more >

Last weekend’s (eek, super delayed post, this is from 2 weekends ago!!) al fresco was indoors because IT. IS. SO. HOT. I pretend like I’m upset about this, but in reality, my complaints are all big fat lies. I love the sun. Summer months are the sh!t. But maybe I should back up. I actually took pics of the whole day’s eats. Well, almost. I had banana bread with two eggs for breakfast. We went to the co-op and the farmer’s market for grocery shopping, followed by a lunch date at Crepeville. I… Read more >
