The best of Costco

Oh my gosh you guys, I went to Costco yesterday and literally squealed in the aisles due to all the new (totally awesome) things I found. Even though we mostly stuck to our list, there were a few things I couldn’t help but get.  The rest were added to my mental shopping list for next time though. Here are the highlights: Vicolo roasted tomato with goat cheese & fresh basil. I’ve made pizzas with their plain crusts several times, but never tried the already prepared ones.  Costco is selling this two pack for cheap and… Read more >

Weekly Recap

This week was fun.  Busy and not busy in perfect amounts.  One thing I’ve noticed about working part time is there’s a big (HUGE) difference between 2 shifts and 3 shifts.  It may not sound like it, but I feel like the time off allows me to get so much more done.  And rather than fill it with errands and chores, I can actually hang out and relax and enjoy myself.  It’s lovely.  Here are some of the things I ate this week. I’m loving how much [free] produce I have access to living in the ‘burbs (slash farm country).  My garden is going bonkers, but I’m also reaping the benefits of others’ prolific gardens.  The peaches were a gift from a former patient’s family.  The lemon cucumber (??) and melon are from Kyle’s work shop’s owner’s fields (along with an unpictured zucchini the size of my leg).  And then there’s the cabbage and peppers that I’m currently fermenting…fingers crossed!   Since we don’t have cable, we are big into Amazon prime and Netflix instant streaming.  Has anyone… Read more >

Breakfast rotation

I have been eating the same thing (nut butter & jam) on repeat so I decided on one of my days off last week to do something special. Pancakes! These are gluten free but not vegan (I used an egg to bind them).  They turned out lovely and I’m sorry to say I didn’t follow a recipe at all, nor did I write down what I did as I made the batter. Here’s what I can tell you.  The flours I used were brown rice & almond.  I used lucuma powder as a sweetener.  And… Read more >

Not raw

You can thank T.J. for this post. He convinced me to blog. [Ok not really, I have been waiting to share this recipe when I had some free time. But if you are reading this Alexandria, you have one awesome man.] So. It may not look like much but it was a life saver the other week when I was swamped in the ICU and had 2 seconds to inhale lunch. I’m not even exaggerating. Because I use my breaks to pump or nurse, eating is hard to fit in. But of course I do… Read more >
