“Surprise” cookies

  Baby Batch Peanut Butter “surprise” Cookies [vegan, gluten free, FODMAPs friendly] Ingredients: 2 tbsp vegan mayo (I used nasoya whipped) 3 tbsp creamy natural peanut butter 1/4 cup cane sugar 1/2 tsp vanilla extract 1 tbsp ground chia seeds 1 tbsp water 1/2 cup oat flour 1/2 tsp baking powder pinch of salt Directions: Combine mayo and peanut butter together until well mixed.  Add chia seeds and water into the mix.  Let it rest for a bit. Powerful strong greens

Talk about a lettuce with a kick!  Arugula is something fierce.  I’m not a huge fan, to be honest, but if it’s amongst other greens I don’t mind it. HOW!?! Seriously, how do SAHM / bloggers do it? I’m only 3 days into Kyle’s 10 days out of town and pretty sure I’m going to turn into an almond by day 5 at the rate I’m pounding through this Costco tub of roasted nuts.  And I haven’t written a single new post aside from this one I’m working on now.  Which may or may not go live before Kyle returns. PBBJ

Yup.   I did this. I took a photo of a peanut butter and jelly sandwich. But trust me, it was no ordinary PB&J. Udi’s GF bread. Pacific Beach organic peanut butter. Mom’s home-made raspberry jam. And bacon!!!!!!!!!!   Question: When will it end? BBQ jackfruit

I’d never even heard of jackfruit until I moved to Los Angeles.  Apparently it’s a pretty popular vegan replacement for meat in dishes that would otherwise use shredded chicken or pulled pork.  Something about the stringy consistency.
