House-warming & Memorial weekend

Bacon!

Pesto & Pancakes (not together)

Here’s some of the meals I prepped for last week. If you recall, making bulk grains in the rice cooker was one of the things on the checklist.  I used this wild rice in Kyle’s breakfast burritos (with lentils, salsa, and cheese) and in my lunch salads (with lots of veggies).  And then in this dinner, of course. Checklist fun

Who doesn’t love a nice organized to-do list? This past week was a little different because Kyle was out of town a few nights working.  But he came home to sleep a little bit in between (night shifts).  And he wanted me to pack all his food so he wouldn’t eat crap on the road.  Hence the need for a very mapped out menu.  I can’t stay organized without it all written out nowadays.  My head is too full of other crap (like the tune to head shoulders knees and toes…make it go away!). Sriracha brussels & quinoa

There’s nothing I love more than being gifted food.  I’m a simple girl foodie. Seriously.  To all the people reading this who plan on buying me presents in the future, take note.  [Crickets] My mother in law actually traveled with Brussels sprouts in her luggage.  And then left them with me. Ummm…I’m not sure who’s the bigger weirdo in this scenario…her for bringing produce as a carry-on, or me for being over the moon about it…close call.
