Vegan grape & chix salad [vegan, gluten free] Ingredients: 1 cup diced vegan chik’n meat (ie Beyond Meat, gardein, etc.) 1/2 cup halved red grapes 2 tbsp vegan mayo (ie Nayonaise, NayoWhipped) 1 tbsp garlic infused olive oil (ie Garlic Gold) 1/4 –1/2 tsp curry powder 1/2 tsp mustard powder salt & pepper (to taste) Directions: Dice faux chick’n meat and halve grapes. I don’t want to sound like a whiner, but DAYAM, being a mom is hard work. I always thought I knew this, but when Kyle was out of town I really realized it. For real. Trying to be productive during those 5 days was a joke. I gave up after the first day. So much for finishing moving in (I had wanted to surprise Kyle by having the house all done when he returned from his trip). Maybe it’s just me, but I find it exciting seeing what new (to me) products are available in different areas. I have been seriously enjoying browsing the shelves of our local co-op and grocery stores (Nugget, Whole Foods). The prepared foods sections have all kinds of different stuff and there are tons of hippie friendly companies with local distribution! I love it. I’m sure it’ll eventually get old – or at least less wondrous – because I was just as enchanted when we first moved to Santa Monica and I had 6 Whole Foods stores… Read more >

May already! The time flying by is even more noticeable now that I have a kiddo who gets bigger by the day second. Most of his weight is going to his cheeks, which I love love love. Oh, hey, I can grab rings, no biggie. This week was a busy one for us as we were out of town all last weekend. Lots of things to still get straightened away in setting up our house. Ugh! My sister sent me a guest post without any prodding from me – clearly blogging runs in our blood.
