Tropical meets comfort

When I think of island vacation getaways, I think of coconuts.  When I think of winter comfort cooking, my mind goes to butternut squash.  So why not combine the two?  Oh yes I did. The base of the dish was made and then frozen nearly a month ago…back when my friend gave me two cases of butternut squash. I used the slow cooker, adding an entire butternut squash (cubed) and a box of Vita Coco coconut water and leaving it alone for 4 hours to do it’s thang.  Before and after. Then I tupperwared it… Read more >

Lent Can Be A Healthy Tool

Thanks for the triathlon encouragement!  I’m pretty excited to be checking off another bucket list item…plus doing it with my dad is one of the best parts about it.  To be honest, I haven’t so much as dipped my toe in a pool (or any body of water for that matter) in several years.  [Insert nervous laughter]  Yes, I did swim team growing up, but still.  I definitely don’t have a cap or goggles (or non-bikini suit?) currently.  So it will be an interesting “training” period to say the least.  My dad, on the other… Read more >

Tri to get excited

In New York, I was a NYRR member.  I ran almost every 10K during the two month period of decent weather (if I wasn’t working), and a few half marathons too.  Truthfully, I think I could run Central Park with my eyes closed.  Moving to California was a breath of fresh air in the running department.  The weather is rarely an obstacle and (as I’ve already shared) the scenery is exceptional.  However, I do miss the excitement of races.  I’ve been keeping my eye out for local running events, but my schedule is friggin’ packed… Read more >

Holy April

Oh my gosh April has been non-stop and it’s hardly even started!  This past weekend alone was ridic…Finn turned two, my parents came into town, and a bunch of friends got together for the MS walk…oh and then there was my sister-in-law’s wedding shower.  Yeah.  That’s normal.  I truly love being with family and friends, so this weekend was all about them and not so much about nursing or blogging.  In the words of Jackie O, “I want to live my life, not record it.” And yet, I did record some of it…just not very… Read more >

Booze & Border

If you’re a regular reader, you know my parents are foodies and when they visit me, we tend to go big. They’ve treated us to some of my finest meals – from Del Posto and Hearth to many other dining faves. This visit was only a short one, but we still packed in a good time – strolling on the beach and soaking up the sun’s rays.  Before heading to dinner, we enjoyed drinks at The Penthouse.  Happy hour at the The Huntley Hotel in Santa Monica is worth the pricey drinks because of the… Read more >
