Snowballs, Kale & Ivy

I woke up Friday with every single finger and toe crossed because the unit was overstaffed by one nurse and I was the first on the list to get a "holiday."  So as long as nobody called in sick, my phone was set to ring between 4 and 5 am with happy news.  I’ve never looked forward to a pre-sunrise call more.  At 4:45 I got the blessed call and by 4:50 I was back asleep.  I took full advantage of the free day and slept in, but once I woke up, I set right… Read more >

Hangover food cont.

Happy Thanksgiving!!  [slash happy birthday to my sister] I’ve been working all week, so I don’t have anything that’s current to share.  Mostly my same old same old.  In lieu of a post about my work food, I’m just going to recap the remainder of my hangover recovery from last Sunday.   But first, a simple THANK YOU to my readers.  I love writing, but I admit it’s all the more enjoyable knowing there are other people out there who like reading my musings (besides my in-laws).  I have a ton to be grateful for… Read more >

No more excuses

Kyle got jealous with all my chocolate peanut butter cup eating.  So I made him something to shut him up delight his taste buds, too. I made four, thinking they’d last him through the week.  I don’t know what I was thinking.    Nutty Fudge Cups (vegan, gluten free) [yields 4 cups] Ingredients: 3/4 cup vegan chocolate chips, melted 2 tbsp peanut butter 2 tbsp Earth Balance, melted 2 tbsp powdered sugar (I used NuNaturals stevia baking blend) 1/4 cup walnuts, crushed Directions: Melt chocolate chips.  Melt butter.  Combine with the rest of the ingredients. … Read more >

Carrot glow

When the winter months start in, it’s always best to have a tanning back-up plan.  Enter carrots.  With B-carotene, you don’t need the sunlight to get your orange glow on. But just in case this slightly superficial side effect isn’t your thing, here’s a delicious and comforting carrot dish to (hopefully) win you over.  Good flavors are enticing to everyone, right?  Right. Psst, it’s a slow cooker recipe, too…so that means it takes minimal effort to make.  Faux tan + yummy food + not much work = win win win.   Soy Glazed Carrots… Read more >
