On bread and on greens

Quick meals these days! My philosophy: Throw something on toast or a bed of lettuce and call it a day.   [The Essential Baking Co] GF toast with avocado and goat cheese. GF toast with almond butter and a fried egg. GF toast with goat cheese and smoked salmon and balsamic glaze (carrots and grapes on the side). Don’t Pinch Me

Happy St. Patrick’s Day! Sweaty Selections

This weekend was a (partial) work weekend.  And it was INSANELY hot.  Fall is nowhere in sight and while I usually love 90 degree temps, my hormones are not on the same page.  At all.  Our AC isn’t doing much of anything and so Kyle and I spent a large part of the weekend bitching about how uncomfortable and sweaty we were.  So productive. Accidentally GFV

Alternative title for this post: the day I ate an entire avocado.   Oh look!  A non-egg breakfast!  We were out of eggs, so the night before I made a vegan alternative.  Just silken lite tofu, nutritional yeast, & Bragg’s liquid aminos. What I Ate

It’s been a long time since I did a “what I ate in a day” style post, but I feel like returning to my OG format for the a moment.  Here goes. Breakfast: Vegan & GF pancakes (made with Bob’s Red Mill mix and almond milk).  I didn’t use any kind of vegan egg substitute, I just left it out.  I also used only almond milk (rather than the water/oil combo they recommended).
