For the 4th of July

I’ll be working night shift…which may give me a view of fireworks…maybe not.  But I took it upon myself to celebrate a day early with red raspberry studded pancakes.

Topped in maple syrup (because you don’t need much when there are raspberries oozing from your hot cakes).

    Love the raspberries seeping from the middle…yum. Clearly my day is pretty lame, since its not a holiday over here. Hope work goes well for you tonight!

    It is not a patriotic day for this Canadian, but I am enjoying my day off! I worked two N4 on Sunday and yesterday, and starting tomorrow 4 night shifts! Whew!

    i cheated this time…usually i use the recipe in my fodmaps cookbook, but this time i just used bob’s red mill 10 grain pancake mix. with almond milk instead of water and oil. and then added raspberries.
