Warm crispy crunch

This is not a recipe. It’s completely measurement-free. Here’s the assembly in photo format… GF cocoa rice crisp cereal *It’s not certified gluten free, but the ingredients are GF, so the only source of gluten would be from contamination in it’s processing/production.  Basically, I’m guessing Whole Foods didn’t want to pay more to get certified or use a separate factory/co-packer. GF peanut flour + USV almond milk And bananas. Mashed. Mixed. Microwaved. Munched.  🙂 These are the kinds of things I create for myself when my GI system is being lame and I need fodmaps… Read more >

Fridge foraging

It’s getting to the point where making my meals are almost Top Chef challenges.  The fridge is nearly bare, save for some lingering leftovers and oddities that have been hiding in the back for quite some time. Case in point, this yves veggie cuisine meatless deli turkey.   When I first went vegan, I used to make sandos out of this stuff (or some similar brand) all the time.  I had completely forgotten about it until I discovered it the other day.   Since I haven’t had real deli meat in years, this mock meat… Read more >

Peanuts!

10 years ago, if you asked me my favorite nut butter, I probably would have looked at you like you were crazy.  Was there anything other than peanut butter?  I certainly wasn’t aware of any other kinds.* I went through obscene amounts of peanut butter in college.  I was poor and it was cheap easy to steal from the sorority kitchen.  😉 However, since discovering almond butter, cashew butter, and sunflower seed butter, peanuts have been sidelined.  Poor little bench warmers. Anyway.  I felt like they earned the starting role in last night’s dinner, so… Read more >

Camera purge

If there were any title more appropriate, I’d go with it, but this is really just a bunch of pics that have accumulated…and if they help give you ideas on healthy FODMAPS options, great.  If not, sorry for this post’s random nature.   Two recent recipes inspired this meal: Jenna’s veggie fried rice and Evan’s fried quinoa.  I make quinoa in bulk at the beginning of every week.  Without fail.  Some weeks I make two batches because I go through it so quickly.  I use my rice cooker, so it’s a completely mindless activity…as second… Read more >

Self fulfilling prophecy

I got 5 pounds of oats from Tropical Traditions and I’m working my way through it pretty damn quickly.  Aside from my daily – sometimes double – dose of oatmeal, I have been baking quite a bit too.  Since I had bananas with more brown than yellow sitting on the counter, I knew time was ticking until they would be freezer bound.  But I already have plenty of frozen nanners!  Must. Use. ASAP.   I was winging it as I went with this recipe, but it came out great, so I will share. Peanut Banana… Read more >
