Barely Bake Chia Oaties

I decided to make up a recipe today.  Because my baking skills aren’t as amazing as I’d like (I’m certainly no pastry chef), I usually follow recipes rather diligently.  But tonight, for some reason, I decided to wing it. I suppose I was inspired by the massive shipment I received the day before from NuNaturals.    After they discovered my vegan cornbread recipe (that was perfectly sweet thanks to NuNaturals Stevia Baking Blend), they asked if they could share my recipe with other “foodie enthusiasts.”   As if that wasn’t thrilling enough, they offered to send… Read more >

Dessert three times a day

Cough-E & a Caramel Apple Diggin’ the froth?  Do it!  Do the Stonyfield people know that their Oikos greek yogurt is borderline sinful when combined with apples?  Caramel apples for breakfast with NO guilt whatsoever?  Uh, that gets two thumbs up.  Now that’s a dessert that Gigi can start her day with, controversy free.  Maybe.  Lunch was so boring, I almost don’t want to show it.  Boca vegan burgers open faced on Vermont soft wheat bread with Tribe roasted red pepper hummus.  You can’t go wrong when combining bread and hummus, so as basic as this… Read more >

Lazy foodie

I was too lazy to make coffee this morning, so I headed to Starbucks to get my java fix…plus I’m way more productive without Bravo in the background.  Although I’m not a big fan of Valentine’s Day, I am enjoying the heart cups.  I busted out an apple after my soy misto. Around noon I headed home for lunch.   Mostly I wanted avocado, so I made sure my meal revolved around that.  BBQ sauce/nooch covered one half of the WF sandwich thin, with avocado lathered on the opposite half. I had a bowl of sweet… Read more >

Monday’s sweet tooth

Thanks to my whole foods gift card, I was able to replenish my NuNaturals stevia… This frothy treat is coffee with coconut milk, cinnamon, and NuNaturals.  Luff. Brunch was a bit unconventional…I felt like grilled cheese, so I got crafty and mashed together extra firm Nasoya tofu and nutritional yeast. It looks kinda bizarre, but tasted yum-may. Currently there is a pretty bomb deal going on at Whole Foods with Steaz (when you buy a 4-pack you get another for free), so obviously I went for it.  My sweet tooth took over for the rest… Read more >

Old, New, Orange, ‘Fu

Sunday offered nicer weather than Saturday, but I still wanted warmth in my belly for breakfast.  What to make, what to make…french vanilla SO Delicious coconut milk coffee, followed by the world’s thickest bowl of pumpkin oat bran.  You would think this would fill me right up, but I was hungry again just a few hours later.  I slept in, though, so it was well past noon, and I set to work on lunch. Cubed ‘fu rubbed in cornmeal and paprika, tossed in a skillet, and sizzled to death.  Pretty snazzy for a recipe on… Read more >
