Lunch Lady

Kyle’s coworkers tease him (in a fun, non-mean way) about his healthy vegetarian lunches.  Apparently he’s the organic, non GMO hippie of his office, just like I am in mine. 🙂 Now his colleagues are wondering when I’m going to start packing food for all of them.  Which I’m considering a victory for veggies everywhere.    Thanksgiving leftovers on quinoa.  Oatmeal & snacks.   Spaghetti.  Crock-pot potato chowder (recipe coming).   Pita SB&J with organic Swanson sunbutter and home-made pluot plum jam.   18 Rabbits gracious granola packet with organic vanilla greek yogurt. New Sabra (& giveaway winner)

You have corn tortillas, falafel, Sabra’s latest hummus, and a grilled green pepper.  What to do, what to do… Spoiler alert: this did not come remotely close to wrapping up.    Not to worry.  I took matters into my own hands.  Literally. And now for the giveaway winners!! #35 hipveganchic eggnog all the way? how on earth did they come up with that? pure genius!!! #70 Shelby (everydayvegangirl) Oh gosh, do I have to pick one?!?!? They all look decadent, but the salty chocolate is calling me!

The return flight

Not having my ID turned out to be way more of an issue on the return flight.  DCA’s security is definitely more on top of it, as compared to LAX’s nonchalant approach to check-in.  On the cab ride to the airport, Kyle’s mom and I decided we wouldn’t bother lying.  If they asked me how old I was, I’d just be honest and then we’d go through the appropriate (read: legal) channels to get clearance to fly without an ID card.  I don’t know what came over me, though, because that whole plan went out… Read more >

Something I owe

I’m making good on my outstanding debts. Here’s the long promised coconut cashew butter recipe. Coconut Cashew Butter 2 cups unsweetened coconut flakes 1 cup raw cashews 1 tsp salt 1 1/4 cup water First I pulsed the coconut and cashews for 5 minutes.  That’s a long time.  I scraped down the sides between each minute session. After it started to get thick and wet I started adding water in 1/4 cup increments. I added the water while it was pulsing (leaving the top on and just pouring the water through the shoot). Depending on… Read more >

Camera purge

If there were any title more appropriate, I’d go with it, but this is really just a bunch of pics that have accumulated…and if they help give you ideas on healthy FODMAPS options, great.  If not, sorry for this post’s random nature.   Two recent recipes inspired this meal: Jenna’s veggie fried rice and Evan’s fried quinoa.  I make quinoa in bulk at the beginning of every week.  Without fail.  Some weeks I make two batches because I go through it so quickly.  I use my rice cooker, so it’s a completely mindless activity…as second… Read more >
