Bring this

As Thanksgiving approaches, more and more emails requesting veg-friendly recipes have been trickling in.  The common concern seems to be making plant based dishes that are yummy & hearty, and don’t scare off meat eaters.  As a vegan, I totally understand the anxiety that comes with meat-centric gatherings.  When I first went veg, dining with my immediate family wasn’t a problem, but at larger group meals I frequently found myself limited to bread and salads.  It didn’t take long for me to realize that I had to take matters into my own hands.  My suggestion… Read more >

More cups

Kyle got jealous with all my chocolate peanut butter cup eating.  So I made him something to shut him up delight his taste buds, too. I made four, thinking they’d last him through the week.  I don’t know what I was thinking.    Nutty Fudge Cups (vegan, gluten free) [yields 4 cups] Ingredients: 3/4 cup vegan chocolate chips, melted 2 tbsp peanut butter 2 tbsp Earth Balance, melted 2 tbsp powdered sugar (I used NuNaturals stevia baking blend) 1/4 cup walnuts, crushed Directions: Melt chocolate chips.  Melt butter.  Combine with the rest of the ingredients. … Read more >

Carrot glow

When the winter months start in, it’s always best to have a tanning back-up plan.  Enter carrots.  With B-carotene, you don’t need the sunlight to get your orange glow on. But just in case this slightly superficial side effect isn’t your thing, here’s a delicious and comforting carrot dish to (hopefully) win you over.  Good flavors are enticing to everyone, right?  Right. Psst, it’s a slow cooker recipe, too…so that means it takes minimal effort to make.  Faux tan + yummy food + not much work = win win win.   Soy Glazed Carrots… Read more >

Green bean casserole

I know there are a lot of families that consider a green bean casserole a holiday staple.  We were never that family.  So I’ve actually never tried a green bean casserole.  To be honest, it doesn’t sound that amazing. To be clear, this is not a green bean casserole.  But it is a baked pasta dish.  And it does have green beans.  So by default, it’s kinda a green bean casserole.  Does that make any sense?  Hmmm… Well, I’ll just share the recipe and let you decide. Creamy Green Bean Casserole (vegan) Ingredients: 16 oz…. Read more >

The slow-cooker secret

…is that there is no secret.  There are no tricks you need to know to make a perfect meal. It’s virtually idiot proof.  [I say virtually, because I’m sure there’s some moron somewhere who did something wrong]  The only way I think you could mess up a crock-pot recipe is by forgetting to plug it in. Take this meal, for example.  I made it last week and I just threw things in and hoped for the best. The outcome? Not too shabby. Now since I know you’re going to ask me what was in it,… Read more >
