What I Ate Wednesday

I’ve never officially joined in on the WIAW festivities, but today’s is a special edition, so I knew I had to partake.  Unfortunately, I didn’t catch all my food on film (I forgot how hard it is to remember to take pics of every. single. thing!), but I did my best, despite being out and about for much of the day.

My alarm went off at 8, but I didn’t get out of bed til 9.  I was reading, and loving every page, but eventually the call of coffee dragged me from the sheets.  

I don’t have a photo of my java, but it was mostly milk with a few drops of NuNatural’s vanilla stevia.  At home I drink super light, milky coffee, whereas at work I sip darker, stronger brews.  I gauge it’s strength by it’s color.  [Wow, taken out of context that could sound pretty bad]

I had three waffles for breakfast (leftovers from a Surprisingly Vegan photoshoot).  The first was topped with chopped apple and then drizzled in thinned PB.  The second had banana slices with Sunflower butter.  The third was plain. 

After breakfast I did some errands around the house, wasted a few hours watching tv and blogging, then got ready to head to the pool. 

I nearly doubled my previous workout distance, this time doing 30 laps (almost a mile!).  My arms are pretty sore today, but I felt great during the swim.

Yesterday I was prepared with fruit as a post-workout snack (after last week’s routine I was so desperately needing sugar after I got out of the pool, I was shaking).  I didn’t have the same issue this time, but the apple/strawberry mix was still a tasty snack.

By the time I got home, I had only a few minutes before a yoga date with Ethel, so I scarfed a snack plate down.

There’s nothing gourmet about a quesadilla (with apples and hummus), but it hit the spot.

Shredding Follow Your Heart’s cheddar alternative makes it melt easily.  Maybe too easily…

I dipped the Alvarado Street sprouted tortilla, in all it’s gooey cheesy glory in the hummus as I ate it.  Fabulous.  If you’ve never had faux cheese and hummus together you are missing out.  Whether on a tortilla or slices of bread, it’s an unbelievably awesome combo.  They call it a “crack wrap” for a reason, people.

Yoga was awesome.  I did skip some positions because my lower back started to get aggravated and my already tired arms were worked to the extreme, but I left feeling great.

When I got home, Kyle was also just getting back from work.  We had 30 minutes ‘til we had to leave for our movie date, which left me the choice of eating dinner or showering.

Obviously I chose food.  

I need to learn how to make Whole Foods’ tempeh salad because I’m completely addicted to it.  I know the dominant ingredients are tempeh, sunflower seeds, and vegenaise; but the veggies and spices are the unknowns that I want to figure out.

I made a wrap.  Quick.  Easy.  Able to be eaten while standing in the kitchen.

I am normally very against eating while standing in the kitchen…it’s so mindless and doesn’t encourage slowly enjoying food.  However, Kyle was cooking and I wanted to hang out with him.

Long after the wrap was gone I continued to dip baby carrots into the tempeh salad.

After Kyle and I were both done with our (rushed) dinners, we headed to the movie theater.  Keep in mind I was still coated in a sexy mess of public pool super chlorine and yoga sweat.  Hot. 

Harry Potter!!!!  Gah.  I’ve been waiting to see it for-eh-ver.  I’m happy I read the book so long ago because I had forgotten so much about how it ended.  It’s a bittersweet thing, knowing the series is all over now.  🙁

When I got home I showered and sipped hot cocoa…and then face planted in my pillow.  So.  Tired. 

Now.  Here’s where the “special edition” of WIAW comes in…

What I’m Auctioning Wednesday!

I mentioned this cause last week, and I’m happy to announce that a batch of my quinoa granola (vegan, gluten free) will be auctioned off to raise money for Susan.

I promise it is every bit as delicious as it appears…and you can enjoy each bite knowing your donation is helping someone in need.  It’s a GREAT cause, so please please please remember to go here on the 25th to bid on my granola.  I’ll probably add in some extra hippie faves, too.  😉

    mmmm looks good. I have tried hummus/daiya before in a wrap (thanks to your blog) and I agree…it’s amazing.

    I’m dying to see Harry Potter!! But I think it will have to wait a couple more days for me! I don’t know how I’ll get through it ha…

    When I’m at work I drink pots of green tea. POTS! Especially on nights, not only for the energy but for the warmth – the AC makes the unit very cold!

    I would love to try the quesadilla, but I cannot purchase vegan cheese in my area *sad face*. I have to go without.

    P.S: Did you try the Yogi Kombucha Green Tea yet? Has it changed your life?

    i whisk together peanut butter and almond milk. it helps if i microwave them in a bowl first then whip it real good!

    I will ALWAYS choose food over a shower! No question. I need to see HP!!! I’m putting it off, I’m a bit scared to “end my childhood”!

    I just commented on Chelsey’s post about how close to my heart this cause is. My mom had Hodgkin’s lymphoma. It was tough, but we all made it and I will definitely be donating to this cause!

    hmm, apples on waffles is something I’ve never tried. I’ve made apple pancakes before, but I cooked the apples a bit first. Looks good! Also, have you had almond cheese before? The cheddar and mozzarella both melt pretty well if you haven’t tried them out!

    You can actually call Whole Foods and ask for the ingredients list for their salad bar items. I called them recently to find out what was in the oil free balsamic dressing (soooo good!) and they willingly gave me the list of ingredients. It might help you morph your own version of that tempeh dip…

    I bought that Kevita today too. I liked the way it tasted but it hurt my stomach. Anything with carbonation (besides beer, oddly and fortunately enough) kills my stomach.

    Those waffles look insane! I haven’t seen the tempeh salad at WhoFo before. I’ll keep an eye out.

    I was wondering if you ever go to any of the Santa Monica farmers markets, and if so, which Saturday market you would recommend? I’ll be in town a week from tomorrow (!!) and would love to hit one up. I’m scoping out apartments and job stuff with the goal of making a permanent LA move in late August. I’m way excited!

    I am addicted to the WF Curried Tempeh Salad…I played around with a bunch of recipes to try to replicate it, and it turns out it’s basically the Ina Garten Curried Chicken Salad recipe with tempeh instead of chicken!
