I just wanted salad dressing

Wedding, Beach & Tennis

What a weekend. It all started with a Friday wedding. Ok, actually it all started with a really awesome breakfast.   Oats topped in a perfectly fried egg and avocado. Kyle came home from work early, so I got to eat lunch with him, which was a nice change in routine. It’s not delivery…

It’s pick-up. Since publishing my book, I’ve been rather lazy in the cooking department.  Home-made eats have been at an all time low.  Our kitchen is sad, I’m sure, but I’m enjoying the time off. Anyway, when delivery.com asked me if I’d like to try out their service (with a $10 off voucher) I said sure!  It was the perfect excuse (not that I need justification for getting take-out).   The most massive banana ever.  At the perfect state of ripeness.   A work breakfast (flaxy oatmeal) that I didn’t end up eating because I got cafeteria french toast instead.  GAHHHHH!!!  Why can’t I quit you!!! Quinoa, roasted veggies, and nooch up the yin yang. Greens, roasted veggies, hardboiled eggs, and avocado.  Again, I nooch-ed it up post-photo. Curry up slow cooker

These were the leftovers from this dinner. Curried cauliflower with greek yogurt raita. The curry flavor was rather intense, so rather than eat the remaining dish as it was served in the restaurant, I decided to try to extend it’s life and balance out the spices. Enter slow cooker. 1 1/2 cups rice + 3 cups water + 1 cup plain almond milk After 4 hours of slow cooking on low, I stirred it all together and added roasted cashews.
