Bienvenidos

Spanish cuisine is nothing new to me.  In college, I studied abroad in Barcelona; and have returned to Spain several times since. The country is amazing, so anyone who is considering traveling to Espana, go! Truth be told, Spain’s national cuisine isn’t my fave, but the rest of what Spain has to offer is.  I’ve always been lactose intolerant, so that part of my dietary accommodations hasn’t changed.  But I ate fish previously, so being both meat and dairy free was new on this trip.  For the most part, I found adequate options.  They may… Read more >

What I Ate Wednesday

I’ve never officially joined in on the WIAW festivities, but today’s is a special edition, so I knew I had to partake.  Unfortunately, I didn’t catch all my food on film (I forgot how hard it is to remember to take pics of every. single. thing!), but I did my best, despite being out and about for much of the day. My alarm went off at 8, but I didn’t get out of bed til 9.  I was reading, and loving every page, but eventually the call of coffee dragged me from the sheets.   I… Read more >

Quinoa carotene bowl

Who loves orange food?  I do!  I probably have amazing Vitamin A levels 🙂   Sweet potatoes have B-carotene up the yin yang (a precursor to Vitamin A).    I had baked these rounds a few day ago and they were just waiting to be incorporated into a recipe.   More orange foods!  Bell peppers and carrots and hummus… Plus red quinoa and couscous.   I ate some of the baked sweet potato rounds as chips.  Perfect hummus vehicles 🙂 The only thing you need to do for this recipe is add everything to a… Read more >

“You can’t do x,y,z as a vegan”

That is what American David Zabriskie is disproving as he competes in his fifth Tour de France – this time fueled by a vegan diet. My dad sent me this article from the WSJ, which I read this morning with my cup of joe. I’ve read both of Lance Armstrong’s books, so I’m familiar with the grueling bike race and all the intense, specific, calculated ways these athletes eat, drink, and transfuse blood replete themselves on the tour. Apparently throughout the race’s 107 year history, riders have tried everything from wine and cognac, to steak… Read more >

Much ado about nothing

Well, that whole 405 “carmaggedon” thing turned out to be quite a bust. After hearing months and months of hype, I think everyone was expecting the worst…which caused people to take extraordinary measures (like riding your bike to work and then spending the weekend sleeping over at your cousin’s house). I had it better than many of my coworkers, who were put up in dorm rooms.  But I wish I had just ignored all the hoopla and slept in my own bed, down my normal AM workout routine, and driven to work.  Like every other… Read more >
